Ingredients
- 200 g dried wheat noodles (lo mein/ramen)
- 3 tbsp soy sauce
- 2 cloves garlic
- 4 stalks scallions
- 1 tsp sesame oil
- 1 tbsp neutral oil (or toasted sesame oil for extra flavor)(optional)
- 1 tsp rice vinegar (or black vinegar)(optional)
- 1 tsp sugar(optional)
- 1 tsp toasted sesame seeds (optional)(optional)
Instructions
- 1
Prep (10 minutes): Mince the garlic. Thinly slice the scallions, separating whites and greens. If using optional sugar and vinegar, measure them out.
- 2
Cook noodles (10 minutes): Boil a pot of water, cook noodles according to package directions until just tender, then drain and reserve a small splash of cooking water.
- 3
Make sauce (about 2 minutes within the cook time): In a large pan or wok over medium-high heat, add neutral oil (if using). Sauté scallion whites for 30–60 seconds, then add garlic and cook until fragrant (about 30 seconds). Stir in soy sauce, sugar (if using), and vinegar (if using). Loosen with a splash of reserved noodle water to form a glossy sauce.
- 4
Toss and finish: Add drained noodles to the pan and toss until evenly coated. Turn off heat, add scallion greens and sesame oil, toss again, and serve immediately. Top with sesame seeds if using.
