Ingredients

  • 7 ounces Fideo pasta (or broken vermicelli)
  • 3 medium Roma tomatoes
  • 0.25 cup White onion
  • 1 piece Garlic clove
  • 6 cups Chicken broth
  • 2 tablespoons Vegetable oil
  • 1 teaspoon Salt
  • 4 sprigs Fresh cilantro(optional)

Instructions

    Place the tomatoes, onion, and garlic in a blender with half a cup of chicken broth. Blend until completely smooth.

    Heat the vegetable oil in a large pot over medium heat.

    Add the fideo pasta to the pot and stir constantly until the noodles are golden brown and toasted.

    Carefully pour the blended tomato mixture over the toasted noodles. Cook for 2-3 minutes until the liquid reduces slightly.

    Add the remaining chicken broth and salt. Bring to a boil.

    Reduce heat to low, cover the pot, and simmer for 10-12 minutes or until the noodles are tender.
