
Papas con Chorizo

Ingredients
- 1 lb Russet potatoes
- 9 oz Mexican chorizo
- 0.5 cup White onion
- 2 tbsp Vegetable oil
- 0.5 tsp Salt
- 2 tbsp Fresh cilantro(optional)

Peel the potatoes and cut them into 1/2-inch cubes.

Place the potato cubes in a pot of salted water, bring to a boil, and simmer for 5-7 minutes until slightly tender but still firm. Drain well.

In a large skillet over medium heat, add the chorizo (remove casing if necessary). Cook, breaking it apart with a spoon, for about 5-8 minutes until browned.

Remove the chorizo from the skillet and set aside, leaving the rendered fat in the pan. If there isn't enough fat, add the vegetable oil.

Add the potatoes and diced onion to the skillet. Fry over medium-high heat, stirring occasionally, until the potatoes are golden brown and crispy on the edges.

Return the cooked chorizo to the skillet and stir to combine with the potatoes. Cook for another 2-3 minutes to allow flavors to meld.

Season with additional salt if needed and garnish with chopped cilantro before serving.
