Ingredients
- 2 medium (about 1 lb) Sweet potatoes, diced into 1/2-inch cubes
- 2 tbsp Olive oil
- 1 small Yellow onion, diced
- 1 medium Red bell pepper, diced
- 2 peppers Chipotle peppers in adobo sauce, minced
- 1 tbsp Adobo sauce
- 2 cloves Garlic, minced
- 1 tsp Ground cumin
- 1 tsp Smoked paprika
- 1/2 tsp Salt
- 1/4 tsp Black pepper
- 2 Green onions, sliced(optional)
- 2 Fried eggs(optional)
Instructions
- 1
Prep all vegetables: dice the sweet potatoes (no need to peel), onion, and bell pepper, and mince the garlic and chipotle peppers (about 10 minutes).
- 2
Heat 1 tbsp olive oil in a large cast-iron or nonstick skillet over medium-high heat. Add the sweet potatoes in a single layer and cook undisturbed for 4-5 minutes to develop a golden crust, then stir and continue cooking 8-10 minutes until tender and crispy at the edges.
- 3
Push the sweet potatoes to one side, add the remaining 1 tbsp oil to the empty side of the pan, and sauté the onion and bell pepper for 4-5 minutes until softened and lightly browned.
- 4
Stir in the garlic, chipotle peppers, adobo sauce, cumin, smoked paprika, salt, and black pepper. Cook for 2-3 minutes, tossing everything together so the hash is evenly coated and fragrant.
- 5
Taste and adjust seasoning. Top with sliced green onions and a fried egg per serving if desired, and serve hot.
