Ingredients

  • 1 cup Black beans (canned, drained and rinsed)
  • 2 Flour tortillas (8-inch)
  • 1 cup Shredded cheese (cheddar or Mexican blend)
  • 1 tbsp Olive oil
  • 1 tsp Smoked paprika
  • 1/2 tsp Ground cumin
  • 1/2 tsp Garlic powder
  • 1/4 tsp Salt(optional)
  • 1/8 tsp Black pepper(optional)
  • 1/2 cup Salsa
  • 1 tbsp Lime (juice)

Instructions

  1. 1

Prep (10 minutes): In a bowl, mash the black beans slightly. Stir in smoked paprika, cumin, garlic powder, and salt/pepper to taste.

  2. 2

Cook (15 minutes): Heat olive oil in a skillet over medium heat. Warm one tortilla, then sprinkle half the cheese on it. Add the spiced beans, fold, and top with the remaining cheese. Cook 3–4 minutes per side until golden and the cheese melts.

  3. 3

Repeat with the second quesadilla if needed, keeping the skillet at medium heat to crisp without burning.

  4. 4

Serve: Cut into wedges, then top with salsa and squeeze lime juice over the top.
