Ingredients
- 8 pieces flour tortillas
- 2 cups smoked shredded beef
- 2 tablespoons chipotle peppers in adobo sauce
- 1 cup canned diced tomatoes
- 1/2 cup onion
- 2 cloves garlic
- 1 cup shredded cheddar cheese
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- 1
Preheat the oven to 375°F (190°C). In a skillet, heat olive oil over medium heat, add the onion and garlic, and sauté until softened, about 5 minutes.
- 2
Stir in the chipotle peppers, diced tomatoes, salt, and black pepper; simmer for 10 minutes until the sauce thickens slightly.
- 3
Add the smoked shredded beef to the sauce, mix well, and keep warm on low heat.
- 4
Place a tortilla on a flat surface, spoon about 1/4 cup of the beef mixture onto the center, roll tightly, and place seam‑side down in a baking dish; repeat with all tortillas.
- 5
Pour any remaining sauce over the rolled enchiladas, sprinkle shredded cheddar cheese on top, and bake for 25‑30 minutes until the cheese is melted and bubbly.
- 6
Remove from the oven, let rest 5 minutes, then serve hot.
