Ingredients
- 1 large English cucumber
- 3 cloves garlic
- 2 tablespoons rice vinegar
- 1 tablespoon soy sauce
- 1 teaspoon sesame oil
- 1/2 teaspoon sugar
- 1/4 teaspoon salt
- 1 teaspoon toasted sesame seeds(optional)
- 1/4 teaspoon red chili flakes(optional)
Instructions
- 1
Rinse the cucumber and pat dry. Smash it firmly with the flat side of a knife or a rolling pin until it cracks and splits.
- 2
Tear or cut the smashed cucumber into bite-sized chunks and place in a colander. Sprinkle with salt and let drain for 5 minutes to draw out excess water.
- 3
Meanwhile, mince the garlic and whisk it together with the rice vinegar, soy sauce, sesame oil, and sugar in a small bowl.
- 4
Pat the cucumber dry, transfer to a serving bowl, and pour the dressing over. Toss well to coat.
- 5
Top with sesame seeds and chili flakes if using, and serve immediately.
