  • 2 lbs ground beef (85% lean)
  • 1 cup breadcrumbs
  • 1/2 cup onion, finely diced
  • 1/4 cup milk
  • 2 large eggs, beaten
  • 1 tbsp Worcestershire sauce
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup ketchup
  • 2 tbsp brown sugar
  • 1 tsp yellow mustard

    In a large mixing bowl, combine the ground beef, breadcrumbs, diced onion, milk, eggs, Worcestershire sauce, garlic powder, salt, and pepper.

    Mix the ingredients by hand until just combined, being careful not to overwork the meat which can make it tough.

    Shape the meat mixture into a compact loaf that will fit comfortably inside your slow cooker.

    Place a piece of parchment paper or a foil strip at the bottom of the slow cooker to help lift the meatloaf out later.

    In a small bowl, whisk together the ketchup, brown sugar, and mustard to create the glaze.

    Brush half of the glaze over the top of the meatloaf in the slow cooker.

    Cover and cook on Low for 6 to 8 hours (or High for 3 to 4 hours) until the internal temperature reaches 160°F.

    Spread the remaining glaze over the loaf 30 minutes before the end of cooking time, then let rest for 10 minutes before slicing.
