Slow Cooker Apple Cider Pulled Pork

Ingredients
- 4 pounds Pork shoulder (butt) roast
- 2 cups Apple cider (fresh, unfiltered)
- 1/4 cup Brown sugar
- 1/4 cup Apple cider vinegar
- 1 tablespoon Smoked paprika
- 1 tablespoon Garlic powder
- 1 tablespoon Onion powder
- 2 teaspoons Kosher salt
- 1 teaspoon Black pepper
- 1 large Yellow onion, sliced
- 1/4 teaspoon Cayenne pepper(optional)

In a small bowl, mix together the brown sugar, paprika, garlic powder, onion powder, salt, pepper, and cayenne to create a dry rub.

Pat the pork shoulder dry with paper towels and rub the spice mixture evenly over all sides of the meat.

Place the sliced onions at the bottom of the slow cooker and set the seasoned pork on top.

Pour the apple cider and apple cider vinegar around the sides of the pork, being careful not to wash off the spice rub.

Cover and cook on Low for 8 to 10 hours (or High for 5 to 6 hours) until the pork is tender and easily shreds with a fork.

Remove the pork from the slow cooker and place it on a large cutting board or tray.

Shred the meat using two forks, discarding any large pieces of excess fat.

Skim the fat from the remaining liquid in the slow cooker and toss the shredded meat back into the juices before serving.
