Ingredients

  • 12 oz Italian sausage (mild or sweet)
  • 1 large fennel bulb
  • 1/2 cup white wine (dry)
  • 2 cloves garlic
  • 1 tbsp olive oil(optional)
  • 1/4 tsp kosher salt(optional)
  • 1/4 tsp black pepper(optional)
  • 1/8 tsp red pepper flakes(optional)

Instructions

  1. 1

Prep (10 minutes): Trim the fennel, remove the tough core, and cut the bulb into 1/2-inch wedges. Mince the garlic.

  2. 2

Cook (20 minutes total): Heat a large skillet over medium-high heat. Add olive oil if needed, then add sausage and cook, breaking it up, until browned, 6–8 minutes.

  3. 3

Add fennel wedges to the skillet in a single layer. Sear without moving for 3–4 minutes, then turn and sear another 2–3 minutes until lightly browned and beginning to soften.

  4. 4

Stir in garlic and cook 30–60 seconds until fragrant. Pour in white wine and scrape up any browned bits from the bottom.

  5. 5

Reduce heat to medium-low and simmer until fennel is tender and the sauce is glossy, 6–8 minutes. Season with salt, pepper, and red pepper flakes to taste. Serve hot.
