Ingredients

  • 12 oz oz lean ground beef
  • 1/2 cup cup canned diced tomatoes, drained
  • 1 tbsp tbsp avocado oil
  • 1/2 yellow onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp tbsp chili powder
  • 1 tsp tsp ground cumin
  • 1/2 tsp tsp dried oregano
  • 8 large romaine lettuce leaves, for wrapping
  • 1 fresh tomato, diced (for salsa)
  • 1 fresh lime
  • 1/2 tsp tsp salt

Instructions

  1. 1

Heat the avocado oil in a skillet over medium-high heat and cook the diced onion 3 minutes.

  2. 2

  3. 3

Stir in the chili powder, cumin, oregano, and drained diced tomatoes; simmer 4-5 minutes until thickened.

  4. 4

Meanwhile, mix the diced fresh tomato with lime juice and a pinch of salt for a quick salsa.

  5. 5

Spoon the beef into crisp romaine leaves, top with the fresh salsa, and serve.
