Ingredients

  • 4 large eggs
  • 4 corn tortillas
  • 1 cup canned crushed tomatoes
  • 1 chipotle chile in adobo, minced
  • 1/4 cup onion, finely diced
  • 2 tbsp vegetable oil
  • 1/4 tsp salt
  • 1/4 tsp cumin(optional)
  • 2 tbsp fresh cilantro, chopped(optional)
  • 1/4 cup cotija cheese, crumbled(optional)

Instructions

  1. 1

Heat 1 tbsp oil in a skillet over medium heat. Add the onion and cook 3 minutes until softened.

  2. 2

Stir in the crushed tomatoes, chipotle, cumin, and salt. Simmer the sauce 5-7 minutes until slightly thickened, then keep warm.

  3. 3

In a separate skillet, heat remaining oil over medium heat and fry the tortillas about 30 seconds per side until lightly crisped. Drain on paper towels.

  4. 4

Fry the eggs in the same skillet, 2-3 minutes, until whites are set and yolks are still runny.

  5. 5

Assemble: top each tortilla with sauce and a fried egg. Garnish with cilantro and cotija if using. Serve immediately.
