Ingredients

  • 10 oz boneless skinless chicken breasts
  • 2 bell peppers (red and green), sliced
  • 1 yellow onion, sliced
  • 1.5 cups cooked white rice
  • 2 tbsp fajita seasoning
  • 1.5 tbsp olive oil
  • 0.5 cup salsa
  • 1 lime, cut into wedges
  • 2 tbsp fresh cilantro, chopped(optional)

Instructions

  1. 1

Slice the chicken breasts into thin strips, then toss with 1.5 tbsp of the fajita seasoning until evenly coated.

  2. 2

Heat 1 tbsp olive oil in a large skillet over medium-high heat. Add the chicken in a single layer and cook 5-6 minutes, stirring occasionally, until browned and cooked through. Transfer to a plate.

  3. 3

Add the remaining 0.5 tbsp olive oil to the skillet, then add the bell peppers and onion. Sauté 4-5 minutes until crisp-tender.

  4. 4

Return the chicken to the skillet, sprinkle with the remaining 0.5 tbsp fajita seasoning, and toss 1-2 minutes until everything is heated through and coated.

  5. 5

Divide the cooked rice between two bowls, top with the chicken and pepper mixture, then add salsa, a squeeze of lime, and cilantro if using.
