Ingredients

  • 1 can (15 oz), drained and rinsed black beans
  • 1 cup cooked rice
  • 3/4 cup shredded cheddar cheese
  • 2 large flour tortillas
  • 1/4 cup salsa(optional)
  • 1/2 tsp ground cumin(optional)
  • 1 tbsp olive oil

Instructions

  1. 1

Heat olive oil in a skillet over medium heat. Add black beans and cumin, mashing slightly, and cook for 4-5 minutes until warmed through.

  2. 2

Stir in the cooked rice and salsa, cooking another 2-3 minutes until heated and combined.

  3. 3

Warm the flour tortillas in a dry pan or microwave for about 30 seconds until soft and pliable.

  4. 4

Divide the bean and rice mixture between the tortillas, topping each with shredded cheese.

  5. 5

Fold in the sides and roll each tortilla tightly into a burrito. Serve immediately, optionally seaming-side down in the skillet for 1 minute to seal.
