Ingredients

  • 2 packs ramen noodles (discard seasoning packets)
  • 250 g ground pork
  • 3 cloves garlic
  • 1 tbsp ginger
  • 1.5 tbsp soy sauce
  • 2 tbsp chili garlic sauce
  • 1 tbsp rice vinegar
  • 1 tsp brown sugar
  • 1 small cucumber
  • 2 stalks scallions
  • 1 tbsp lime juice
  • 3 cups chicken broth (or water + bouillon)
  • 2 small corn tortillas (for taco twist)(optional)
  • 1 tbsp neutral oil

Instructions

  1. 1

Quick pickle the cucumber: thinly slice cucumber. In a bowl, mix rice vinegar and brown sugar with a pinch of salt; toss in cucumber and set aside while you cook (about 5 minutes).

  2. 2

Cook pork: heat oil in a pot or deep skillet over medium-high heat. Add ground pork and cook until browned, 6–8 minutes. Stir in garlic and ginger and cook 1 minute.

  3. 3

Build the spicy broth: add chili garlic sauce and soy sauce to the pork and stir 30 seconds. Pour in chicken broth and bring to a simmer, 5 minutes.

  4. 4

Cook noodles: add ramen noodles to the simmering broth and cook until tender, 3–4 minutes. Stir occasionally and keep broth at a gentle simmer.

  5. 5

Serve taco twist: warm tortillas briefly in a dry pan or microwave. Ladle spicy pork ramen into bowls and top with drained pickled cucumber and sliced scallions. Finish with lime juice. Serve tortillas on the side for scooping.
