Shrimp Scampi Linguine

Succulent shrimp sautéed in a garlic, lemon, and white wine butter sauce.

Ingredients

  • 1 lb Linguine
  • 1.5 lbs Large Shrimp, peeled and deveined
  • 4 tbsp Unsalted Butter
  • 2 tbsp Extra Virgin Olive Oil
  • 4 cloves Garlic, minced
  • 0.5 cup Dry White Wine (Pinot Grigio or Sauvignon Blanc)
  • 1 lemon Lemon Juice
  • 0.25 tsp Red Pepper Flakes(optional)
  • 0.25 cup Fresh Parsley, chopped
  • to taste Salt and Black Pepper

Instructions

    Bring a large pot of salted water to a boil and cook the linguine according to package directions until al dente.

    While the pasta cooks, melt 2 tablespoons of butter with the olive oil in a large skillet over medium-high heat.

    Add the shrimp to the skillet in a single layer, season with salt and pepper, and cook for 1-2 minutes per side until pink and just cooked through. Remove shrimp from the pan and set aside.

    In the same skillet, add the minced garlic and red pepper flakes. Sauté for about 1 minute until fragrant.

    Pour in the white wine and lemon juice. Bring to a simmer and let the liquid reduce by half, about 3-5 minutes.

    Whisk in the remaining 2 tablespoons of butter until melted and the sauce is glossy.

    Return the shrimp to the skillet and add the cooked linguine. Toss everything together to coat the pasta in the sauce.

    Garnish with fresh parsley and serve immediately.
