Sheet Pan Sausage and Veggies

Ingredients

  • 12 oz Smoked Sausage
  • 2 large Bell Peppers
  • 1 medium Zucchini
  • 1 small Red Onion
  • 2 cups Broccoli florets
  • 2 tbsp Olive Oil
  • 1 tsp Dried Oregano
  • 1 tsp Garlic Powder
  • to taste Salt and Pepper

    Preheat your oven to 400°F (200°C) and lightly grease a large rimmed baking sheet.

    Slice the smoked sausage into 1/2-inch rounds.

    Chop the bell peppers, zucchini, and red onion into bite-sized chunks.

    Place the sausage and all vegetables onto the prepared sheet pan.

    Drizzle with olive oil and sprinkle with oregano, garlic powder, salt, and pepper.

    Toss everything directly on the pan until evenly coated, then spread into a single layer.

    Roast for 20-25 minutes, tossing halfway through, until the vegetables are tender and the sausage is browned.
