Ingredients

Servings:6
  • 2 lbs Ground Beef
  • 1 large Yellow Onion, diced
  • 3 cloves Garlic, minced
  • 30 oz Kidney Beans, drained and rinsed
  • 28 oz Diced Tomatoes
  • 2 tbsp Tomato Paste
  • 1 cup Beef Broth
  • 3 tbsp Chili Powder
  • 1 tsp Ground Cumin
  • 1 tsp Smoked Paprika
  • 1 to taste Salt and Black Pepper
  • 1 tbsp Olive Oil

Instructions

  1. 1

Heat olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat.

  2. 2

Add the ground beef and cook until browned, breaking it into small crumbles with a wooden spoon.

  3. 3

Stir in the diced onion and cook for 5 minutes until softened, then add the garlic and cook for 1 minute more.

  4. 4

Drain any excess grease from the pot if necessary.

  5. 5

Stir in the tomato paste, chili powder, cumin, and paprika, coating the meat thoroughly for 2 minutes to toast the spices.

  6. 6

Pour in the diced tomatoes (with juices), beef broth, and drained kidney beans.

  7. 7

Bring the mixture to a boil, then reduce heat to low and simmer uncovered for 30 minutes to allow flavors to meld and sauce to thicken.

  8. 8

Season with salt and pepper to taste and serve hot with optional toppings like cheese or sour cream.
