Ingredients
- 1 1/2 pounds Flank steak, sliced into thin strips
- 1 large Red bell pepper, sliced into strips
- 1 large Green bell pepper, sliced into strips
- 1 medium Red onion, sliced into wedges
- 3 tablespoons Olive oil
- 1 tablespoon Dried oregano
- 1 teaspoon Garlic powder
- 1 teaspoon Ground cumin
- 1/2 teaspoon Dried thyme
- 1/2 cup Feta cheese, crumbled(optional)
- 6 pieces Warm pita bread or flour tortillas
- 1/2 cup Tzatziki sauce

Preheat your oven to 425°F (220°C) and lightly grease a large rimmed baking sheet with oil.

In a small bowl, whisk together the olive oil, oregano, garlic powder, cumin, thyme, salt, and pepper to create the gyro-style marinade.

Place the steak strips, sliced peppers, and onions onto the baking sheet in a single layer.

Pour the marinade over the steak and vegetables, tossing thoroughly with your hands or tongs to ensure everything is evenly coated.

Spread the mixture out again, ensuring the steak pieces are not overlapping too much so they sear rather than steam.

Roast in the oven for 15 to 18 minutes, tossing halfway through, until the steak is cooked to your liking and the vegetables are tender-crisp.

Switch the oven to broil for the last 2 minutes if you prefer extra charred edges on your peppers and meat.

Remove from the oven, sprinkle with crumbled feta cheese, and serve immediately inside warm pitas or tortillas topped with tzatziki.
