Ingredients

  • 2 fillets salmon fillets
  • 1 bunch asparagus
  • 2 tbsp olive oil
  • 1 large lemon
  • 3 cloves garlic
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/8 tsp red pepper flakes(optional)

Instructions

  1. 1

Preheat oven to 425°F (220°C). Line a sheet pan with parchment or foil.

  2. 2

Trim asparagus and pat salmon dry. Cut asparagus into 2–3 inch pieces. Mince garlic and zest the lemon; then juice the lemon.

  3. 3

In a bowl, mix olive oil, lemon zest and juice, minced garlic, salt, black pepper, and (if using) red pepper flakes. Toss asparagus with about half the lemon-garlic oil.

  4. 4

Place salmon on the sheet pan. Brush or spoon remaining lemon-garlic oil over salmon. Arrange asparagus around the salmon in a single layer.

  5. 5

Bake until salmon flakes easily and asparagus is tender-crisp, 18–22 minutes (about 20 minutes total). Serve immediately.
