Ingredients

  • 12 oz boneless, skinless chicken breast
  • 2 cups bell peppers (mixed colors), thinly sliced
  • 1 cup yellow onion, thinly sliced
  • 2 tbsp fajita seasoning
  • 1 tbsp olive oil
  • 1 tbsp lime juice(optional)
  • 1/4 tsp salt(optional)

Instructions

  1. 1

Heat broiler on high. Line a sheet pan with foil and lightly oil it.

  2. 2

Slice chicken thinly. Toss chicken with olive oil, fajita seasoning, and (if using) salt until evenly coated.

  3. 3

Spread chicken on one side of the sheet pan and add peppers and onions. Toss vegetables with any remaining seasoning/oil so everything is coated.

  4. 4

Broil 10–12 minutes, stirring once halfway, until chicken is cooked through (no longer pink) and peppers/onions are tender with charred edges.

  5. 5

Finish with lime juice (if using). Serve hot as fajitas.
