Ingredients

  • 1/2 cup Jasmine or long-grain rice
  • 1 cup Water
  • 12 oz Shrimp (peeled, deveined)
  • 1 tbsp Sesame oil
  • 2 tbsp Soy sauce
  • 3 cloves Garlic (minced)
  • 1 tsp Honey or brown sugar
  • 1 tsp Rice vinegar
  • 1 tbsp Sesame seeds
  • 1 tbsp Olive oil (or neutral oil)
  • 1/2 cup Cucumber (diced)
  • 1/4 tsp Salt(optional)
  • 1/8 tsp Black pepper(optional)

Instructions

  1. 1

Start the rice: rinse rice, then combine rice and water in a small pot. Bring to a boil, cover, reduce to low, and cook until tender (about 10 minutes). Remove from heat and keep covered.

  2. 2

Prep shrimp and sauce while rice cooks: pat shrimp dry. In a bowl, whisk sesame oil, soy sauce, minced garlic, honey, and rice vinegar.

  3. 3

Pan-sear shrimp: heat olive oil in a large skillet over medium-high. Add shrimp in a single layer and cook 1–2 minutes per side until pink and just cooked through. Season lightly with salt and black pepper if desired.

  4. 4

Toss and finish: pour the sesame-garlic sauce into the skillet and toss shrimp to coat for 30–60 seconds until glossy. Fluff the rice with a fork.

  5. 5

Assemble bowls: divide rice between 2 bowls, top with shrimp, spoon any sauce over, and garnish with diced cucumber and sesame seeds.
