Ingredients

  • 2 cups all-purpose flour
  • 3/4 cup boiling water
  • 6 scallions
  • 3 tbsp vegetable oil
  • 1 tsp sesame oil
  • 1/2 tsp salt
  • 2 tbsp soy sauce
  • 1 tsp rice vinegar(optional)
  • 1 tsp grated ginger(optional)

Instructions

  1. 1

In a bowl, mix flour and salt, then pour in boiling water while stirring until a shaggy dough forms. Knead 3-4 minutes until smooth, cover, and rest 10 minutes.

  2. 2

Meanwhile, thinly slice the scallions and mix the dipping sauce: soy sauce, rice vinegar, grated ginger, and a few sliced scallion greens.

  3. 3

Roll the dough into a thin rectangle, brush with sesame oil, scatter scallions evenly, then roll tightly into a log. Coil the log into a spiral, flatten, and roll out again to about 1/4 inch thick.

  4. 4

Heat 2 tbsp vegetable oil in a skillet over medium-high heat. Pan-fry each pancake 3-4 minutes per side until golden brown and crispy, adding more oil as needed.

  5. 5

Cut into wedges and serve hot with the soy dipping sauce.
