Ingredients

  • 2 cups all-purpose flour
  • 3/4 cup boiling water
  • 6 scallions
  • 2 tbsp sesame oil
  • 3 tbsp vegetable oil
  • 1/2 tsp salt
  • 3 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tsp grated ginger(optional)

Instructions

  1. 1

In a bowl, mix flour and salt, then pour in boiling water while stirring. Knead 3-4 minutes until a soft dough forms, cover, and rest 10 minutes.

  2. 2

Meanwhile, thinly slice the scallions and whisk together soy sauce, rice vinegar, sesame oil, and ginger for the dipping sauce.

  3. 3

Roll the dough into a thin rectangle, brush with sesame oil, sprinkle with scallions, roll up into a log, coil into a spiral, and roll out flat again.

  4. 4

Heat vegetable oil in a skillet over medium-high heat. Pan-fry each pancake 2-3 minutes per side until golden and crispy.

  5. 5

Cut into wedges and serve hot with the dipping sauce.
