Ingredients

  • 1 cup All-purpose flour
  • 1/2 cup Boiling water
  • 4 stalks Scallions (green onions)
  • 1 tablespoon Sesame oil
  • 2 tablespoons Vegetable oil
  • 1/2 teaspoon Salt

Instructions

  1. 1

In a bowl combine the flour and salt, then pour in the boiling water and stir quickly to form a shaggy dough; let rest 2 minutes.

  2. 2

Knead the dough on a lightly floured surface for about 30 seconds until smooth, then roll into a thin rectangle about 10×15 cm.

  3. 3

Brush the surface with sesame oil, sprinkle the chopped scallions evenly, and fold the dough in thirds like a letter, then roll out again to a 3‑mm thickness.

  4. 4

Heat a non‑stick skillet over medium‑high heat, add 1 Tbsp vegetable oil, and pan‑fry the pancake 2‑3 minutes per side until golden and crisp.

  5. 5

Transfer to a cutting board, slice into wedges, and serve hot.
