Ingredients

  • 12 oz Ground breakfast sausage
  • 10 Eggs
  • 1/2 cup Coconut milk
  • 4 cups Fresh spinach
  • 1 Red bell pepper
  • 1/2 Yellow onion
  • 3 cloves Garlic
  • 1 tbsp tbsp Olive oil
  • 1 tsp tsp Smoked paprika
  • 1 tsp tsp Salt
  • 1/2 tsp tsp Black pepper
  • 3 Green onions(optional)

Instructions

  1. 1

Preheat oven to 375°F and grease an 8x8 baking dish with olive oil.

  2. 2

Brown the sausage in a skillet over medium-high heat, breaking it up, about 8 minutes. Remove and drain excess fat.

  3. 3

In the same skillet, sauté onion, bell pepper, and garlic in olive oil until softened, 5 minutes.

  4. 4

Add spinach and cook until wilted, 2 minutes. Season with smoked paprika, salt, and pepper.

  5. 5

Whisk eggs with coconut milk until fully combined and slightly frothy.

  6. 6

Fold sausage and vegetables into the egg mixture and pour into the baking dish.

  7. 7

Bake 35-40 minutes until the center is set and the top is golden.

  8. 8

Cool 10 minutes, slice into 3 portions, and store for make-ahead breakfasts. Garnish with sliced green onions when serving.
