Ingredients

  • 1 lb Italian Sausages
  • 3 large Bell Peppers (mixed colors)
  • 1 medium Red Onion
  • 2 tablespoons Olive Oil
  • 1 teaspoon Dried Oregano
  • 0.5 teaspoon Garlic Powder
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black Pepper
  • 1 tablespoon Fresh Parsley(optional)

    Preheat your oven to 400°F (200°C) and lightly grease a large rimmed baking sheet.

    Slice the bell peppers and red onion into 1-inch thick strips.

    Cut the sausages into 2-inch chunks, or leave them whole and pierce with a fork if preferred.

    Place the peppers, onions, and sausages onto the baking sheet.

    Drizzle with olive oil and sprinkle with oregano, garlic powder, salt, and pepper.

    Toss everything together directly on the pan until evenly coated, then spread into a single layer.

    Roast for 20-25 minutes, tossing halfway through, until the sausages are browned and cooked through and the vegetables are tender.
