- 3 large Bell Peppers (mixed colors)
- 1 medium Red Onion
- 2 tablespoons Olive Oil
- 1 teaspoon Dried Oregano

- 0.25 teaspoon Black Pepper
- 1 tablespoon Fresh Parsley(optional)
