- 1/2 diced onion
- 3 cloves minced garlic
- 3 tbsp olive oil
- 1 tsp herbes de Provence
- 1/2 cup chopped parsley
- 1 tbsp capers(optional)
- 1 tbsp lemon juice
- 1/2 tsp salt

Preheat oven to 400°F (200°C). Slice tops off the bell peppers, remove seeds and membranes, and place them upright in a baking dish.

Meanwhile, make the salsa verde: finely chop parsley and capers, mix with lemon juice, a pinch of salt, and 1 tbsp olive oil.
- 5
Uncover peppers for the last 5 minutes of baking, then spoon salsa verde over each pepper and serve warm.
