Ingredients

  • 1 15 oz can Canned black beans (drained and rinsed)
  • 1 medium Bell pepper (red or green), diced
  • 1 small Onion, diced
  • 3/4 cup Ranchero-style tomato sauce or crushed tomatoes
  • 1 1/2 tbsp Olive oil
  • 2 cloves Garlic, minced(optional)
  • 1 1/2 tsp Ground cumin
  • 1 1/2 tsp Chili powder
  • 1/4 tsp Salt(optional)
  • 1/8 tsp Black pepper(optional)

Instructions

  1. 1

Prep (10 minutes): Dice the bell pepper and onion. Mince the garlic if using; rinse and drain the beans.

  2. 2

Cook (about 10 minutes): In a small pot over medium heat, warm the olive oil. Add onion and bell pepper and cook until softened, about 5–7 minutes. Stir in garlic (if using), cumin, and chili powder for 30–60 seconds.

  3. 3

Simmer (about 20 minutes): Add the ranchero-style tomato sauce (or crushed tomatoes) and drained beans. Bring to a gentle simmer and cook, stirring occasionally, until the mixture thickens and the flavors meld, about 15–20 minutes. Season with salt and black pepper to taste.
