Ingredients

  • 8 oz Mushrooms
  • 1 small Onion
  • 2 cloves Garlic
  • 1 tbsp Olive oil
  • 1 cup Ranchero-style salsa (or salsa roja)
  • 1 cup Black beans (canned), drained and rinsed
  • 1 tsp Ground cumin
  • 1/2 tsp Chili powder
  • 1/4 tsp Salt(optional)
  • 1 tbsp Lime juice(optional)
  • 2 tbsp Cilantro (chopped)(optional)

Instructions

  1. 1

Prep (12 minutes): Slice mushrooms, dice onion, and mince garlic.

  2. 2

Sauté (about 10 minutes): Heat olive oil in a skillet over medium-high heat. Add onion and cook until softened, 3–4 minutes. Add mushrooms and cook until they release moisture and start to brown, 6–7 minutes. Stir in garlic and cook 30–60 seconds.

  3. 3

Simmer (about 20 minutes): Stir in salsa, cumin, and chili powder. Add drained/rinsed black beans and bring to a gentle simmer. Cook until flavors meld and the mixture thickens slightly, 15–20 minutes.

  4. 4

Finish (about 0–2 minutes): Taste and adjust with salt if needed. Stir in lime juice and cilantro (if using) and serve.
