Quinoa and Black Bean Salad

A refreshing and protein-packed cold salad with corn, cilantro, and a honey-lime dressing.

Ingredients

  • 1 cup Quinoa
  • 2 cups Water
  • 15 oz can Black beans
  • 1 cup Corn kernels
  • 1 medium Red bell pepper
  • 3 tablespoons Lime juice
  • 2 tablespoons Olive oil
  • 1 teaspoon Cumin
  • 0.25 cup Fresh cilantro(optional)

Instructions

    Rinse quinoa under cold water.

    In a medium pot, bring 2 cups of water and quinoa to a boil. Reduce heat, cover, and simmer for 15 minutes or until water is absorbed.

    Let quinoa cool for 5 minutes, then fluff with a fork.

    In a large bowl, combine the cooked quinoa, drained and rinsed black beans, corn, and diced red bell pepper.

    In a small jar or bowl, whisk together lime juice, olive oil, cumin, salt, and pepper.

    Pour the dressing over the salad and toss well to combine.

    Garnish with chopped cilantro and serve chilled or at room temperature.
