Ingredients

  • 2 cups Broccoli florets
  • 2 cups Chicken or vegetable broth
  • 1 cup Cheddar cheese, shredded
  • 1/2 cup Milk
  • 1 tbsp Unsalted butter
  • 1 tbsp All-purpose flour
  • 1/4 tsp Garlic powder(optional)
  • 1/4 tsp Salt(optional)
  • 1/8 tsp Black pepper(optional)

Instructions

  1. 1

Prep (10 minutes): Chop broccoli into bite-size florets and shred the cheddar if needed.

  2. 2

In a small pot over medium heat, melt butter. Stir in flour and cook for 30–60 seconds to form a roux.

  3. 3

Whisk in broth and milk, then add broccoli and garlic powder. Bring to a gentle simmer and cook until broccoli is crisp-tender, about 12–15 minutes.

  4. 4

Lightly blend or mash the soup with a potato masher or immersion blender (leave some texture).

  5. 5

Reduce heat to low and stir in cheddar a handful at a time until fully melted and thickened. Season with salt and pepper to taste, then serve.
