Ingredients
- 4 large Flour tortillas
- 1 can Canned black beans, drained and rinsed
- 1.5 cups Shredded cheddar or Monterey Jack cheese
- 0.5 teaspoon Cumin
- 0.25 teaspoon Garlic powder
- 1 tablespoon Olive oil or butter
- 0.25 cup Salsa(optional)
Instructions

In a small bowl, toss the drained black beans with cumin and garlic powder. Lightly mash a few of the beans with a fork to help them stick to the tortilla.

Lay two tortillas flat and sprinkle a layer of cheese over each.

Spread the black bean mixture evenly over the cheese-covered tortillas, then top with the remaining cheese and the other two tortillas.

Heat the oil or butter in a large skillet over medium heat.

Place one quesadilla in the skillet and cook for 2-3 minutes until the bottom is golden brown and crispy.

Carefully flip the quesadilla and cook for another 2 minutes until the cheese is fully melted.

Repeat with the second quesadilla.

Slice into wedges and serve immediately with salsa if desired.
