Ingredients
- 2 6-ounce portions Salmon fillets
- 4 tablespoons Basil pesto
- 1 cup Cherry tomatoes
- 10 trimmed Asparagus spears
- 1 sliced Lemon
- 1 tablespoon Olive oil
- to taste Salt and black pepper

Preheat your oven to 400°F (200°C).

Cut two large squares of parchment paper or aluminum foil.

Divide the asparagus and cherry tomatoes between the two squares, placing them in the center. Drizzle with olive oil and season with salt and pepper.

Place a salmon fillet on top of the vegetables in each parcel.

Spread 2 tablespoons of pesto over the top of each salmon fillet and top with 2 lemon slices.

Fold the edges of the parchment paper or foil together and crimp tightly to create a sealed pouch.

Place the parcels on a baking sheet and bake for 15-18 minutes, or until the salmon is cooked through and flakes easily.

Carefully open the parcels (watch out for steam) and serve immediately.
