Ingredients

  • 15 oz Canned Chickpeas
  • 1 cup, diced Cucumber
  • 0.5 cup, halved Cherry Tomatoes
  • 0.25 cup, finely minced Red Onion
  • 2 tbsp, chopped Fresh Parsley
  • 2 tbsp Olive Oil
  • 1 tbsp Lemon Juice
  • 0.5 tsp Dried Oregano
  • to taste Salt and Pepper
  • 2 tbsp, crumbled Feta Cheese(optional)

Instructions

    Drain and rinse the chickpeas thoroughly under cold water.

    In a large mixing bowl, combine the chickpeas, diced cucumber, halved tomatoes, and red onion.

    In a small jar or bowl, whisk together the olive oil, lemon juice, dried oregano, salt, and pepper.
