Pesto Shrimp Skewers

Ingredients

  • 1 pound Large Shrimp
  • 0.5 cup Basil Pesto
  • 1 tablespoon Lemon Juice
  • 1 pint Cherry Tomatoes
  • 1 tablespoon Olive Oil
  • to taste Salt and Pepper(optional)

    If using wooden skewers, soak them in water for at least 20 minutes to prevent burning.

    In a large bowl, toss the peeled and deveined shrimp with the pesto and lemon juice. Let marinate for 10 minutes.

    Thread the shrimp and cherry tomatoes onto the skewers, alternating between the two.

    Preheat a grill or grill pan over medium-high heat and lightly brush with olive oil.

    Grill the skewers for 2-3 minutes per side, or until the shrimp are pink and opaque.

    Serve immediately, drizzled with any remaining fresh pesto.
