  • 1 1/2 lbs Chicken breasts
  • 6 cups Mixed greens
  • 2 whole Avocados, sliced
  • 1/2 cup Extra virgin olive oil
  • 1/4 cup Fresh lime juice
  • 1/2 cup Fresh cilantro, chopped
  • 2 cloves Garlic, minced
  • 1 teaspoon Cumin
  • 1/2 teaspoon Sea salt
  • 1/4 cup Red onion, thinly sliced(optional)

Instructions

    In a small bowl, whisk together the olive oil, lime juice, minced garlic, cumin, and sea salt to create the dressing.

    Place the chicken breasts in a shallow dish and pour half of the lime dressing over them to marinate for 20 minutes.

    Preheat your grill or grill pan to medium-high heat.

    Grill the chicken for 6-7 minutes per side or until the internal temperature reaches 165 degrees Fahrenheit.

    Remove the chicken from the grill and let it rest for 5 minutes before slicing into strips.

    In a large salad bowl, toss the mixed greens with the remaining lime dressing and chopped cilantro.

    Top the greens with the sliced grilled chicken, avocado slices, and red onion.

    Serve immediately with an extra squeeze of fresh lime if desired.
