Ingredients

  • 1 lb beef chuck roast
  • 2 tbsp chipotle peppers in adobo sauce
  • 1 tbsp adobo sauce (from the can)
  • 3 cloves garlic
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • 1/2 tsp smoked paprika
  • 1 tsp brown sugar
  • 1 tbsp apple cider vinegar
  • 1 cup beef broth
  • 1/2 medium yellow onion
  • 1 tsp kosher salt
  • 1/2 tsp black pepper

Instructions

  1. 1

Preheat oven to 325°F (165°C). Pat beef dry and season all over with salt and black pepper.

  2. 2

In a bowl, mix chipotle peppers in adobo, adobo sauce, minced garlic, cumin, oregano, smoked paprika, brown sugar, and apple cider vinegar. Slice onion and place in a Dutch oven or oven-safe pot.

  3. 3

Rub the chipotle mixture over the beef, then place beef on top of the onion. Pour in beef broth, cover, and braise for 3 hours (180 minutes) until very tender.

  4. 4

Remove from oven and let rest 10 minutes. Shred the beef with two forks, then simmer uncovered on the stovetop 5–10 minutes to thicken the sauce to your liking. Taste and adjust salt/pepper if needed.
