One-Pot Sausage and Pepper Orecchiette

Ingredients

  • 1 lb Italian sausage
  • 12 oz Orecchiette pasta
  • 2 cups Bell peppers, sliced
  • 3.5 cups Chicken broth
  • 3 cloves Garlic, minced
  • 0.5 cup Onion, diced
  • 1 tbsp Olive oil
  • 0.25 cup Parmesan cheese(optional)
  • 2 tbsp Fresh parsley(optional)

Instructions

    Heat olive oil in a large pot or Dutch oven over medium-high heat.

    Add the sausage (casings removed) and cook until browned, breaking it into small crumbles with a spoon.

    Add the onions and bell peppers to the pot and sauté for 3-4 minutes until softened.

    Stir in the minced garlic and cook for 1 minute until fragrant.

    Add the dry orecchiette pasta and the chicken broth to the pot.

    Bring to a boil, then reduce heat to medium-low and simmer, stirring occasionally, for about 12-15 minutes or until the pasta is tender and most of the liquid has been absorbed.

    Stir in Parmesan cheese and parsley before serving.
