Avocado Toast with Poached Egg

Creamy mashed avocado on sourdough topped with a perfectly runny poached egg.

Ingredients

  • 1 slice Sourdough bread
  • 0.5 whole Ripe avocado
  • 1 whole Large egg
  • 1 teaspoon Lemon juice(optional)
  • 1 pinch Red pepper flakes(optional)
  • 1 pinch Salt and black pepper
  • 1 teaspoon White vinegar

Instructions

    Bring a small pot of water to a gentle simmer and add the white vinegar.

    Crack the egg into a small ramekin or bowl.

    Create a gentle whirlpool in the simmering water with a spoon and carefully drop the egg into the center.

    Poach the egg for 3 to 4 minutes until the whites are set but the yolk is still soft.

    While the egg cooks, toast the sourdough bread until golden brown.

    In a small bowl, mash the avocado with lemon juice, salt, and pepper.

    Spread the mashed avocado onto the toast.

    Remove the egg with a slotted spoon, pat dry briefly on a paper towel, and place on top of the avocado.

    Garnish with red pepper flakes and extra black pepper.
