  • 0.5 whole Ripe avocado
  • 1 piece Large egg
  • 1 teaspoon Lemon juice
  • 0.25 teaspoon Red pepper flakes(optional)
  • 1 pinch Sea salt
  • 1 pinch Black pepper
  • 1 teaspoon White vinegar

    Toast the sourdough bread until golden brown and crisp.

    In a small bowl, mash the avocado with lemon juice, salt, and pepper until creamy but slightly chunky.

    Bring a small pot of water to a gentle simmer and add the white vinegar.

    Crack the egg into a small ramekin, swirl the simmering water to create a vortex, and gently drop the egg into the center.

    Poach the egg for 3 minutes for a runny yolk, then remove with a slotted spoon and drain on a paper towel.
