Ingredients

  • 1/2 cup Long-grain white rice
  • 1 cup Canned black beans (drained and rinsed)
  • 1/2 medium Yellow onion
  • 2 cloves Garlic
  • 1 tsp Ground cumin
  • 1 tbsp Lime juice
  • 1 cup Vegetable broth (or water)
  • 1 tbsp Olive oil(optional)
  • 1/4 tsp Salt(optional)
  • 1/8 tsp Black pepper(optional)

Instructions

  1. 1

Prep (10 minutes): Finely dice the onion and mince the garlic.

  2. 2

In a pot, heat the olive oil over medium heat (if using). Sauté onion for 3–4 minutes until softened, then stir in garlic and cumin for 30 seconds.

  3. 3

Add rice, black beans, broth, salt, and pepper. Bring to a boil, then reduce to a low simmer and cover.

  4. 4

Cook (25 minutes total): Simmer covered until the rice is tender and liquid is absorbed, about 18–22 minutes. If needed, add a splash of water and continue simmering until done.

  5. 5

Finish: Stir in lime juice, taste, and adjust seasoning. Let stand 2 minutes before serving.
