Ingredients

  • 12 oz Smoked Kielbasa or Italian Sausage
  • 2 large Bell Peppers (mixed colors)
  • 1 medium Zucchini
  • 1 small Red Onion
  • 2 cups Broccoli Florets
  • 2 tablespoons Olive Oil
  • 1 teaspoon Dried Oregano
  • 0.5 teaspoon Garlic Powder
  • to taste Salt and Black Pepper
  • 0.25 cup Parmesan Cheese(optional)

    Preheat your oven to 400°F (200°C) and lightly grease a large rimmed baking sheet.

    Slice the sausage into 1/2-inch thick rounds.

    Chop the bell peppers, zucchini, and red onion into bite-sized chunks, roughly the same size as the sausage slices.

    Place the sausage and all vegetables onto the prepared baking sheet.

    Drizzle with olive oil and sprinkle with oregano, garlic powder, salt, and pepper. Toss directly on the pan until everything is evenly coated.

    Spread the mixture into a single layer, ensuring the pieces aren't too crowded to allow for roasting rather than steaming.

    Bake for 20-25 minutes, tossing halfway through, until the sausage is browned and the vegetables are tender.
