Ingredients

  • 1 cup All-purpose flour
  • 1 teaspoon Baking powder
  • 1/4 teaspoon Salt
  • 2 tablespoons Maple syrup
  • 1 cup Oat milk
  • 1 Egg
  • 2 tablespoons Unsalted butter (melted)
  • 1 cup Fresh blueberries
  • 1 teaspoon Lemon juice
  • 1 tablespoon Powdered sugar(optional)

Instructions

  1. 1

In a bowl whisk together flour, baking powder, and salt; set aside.

  2. 2

In another bowl combine oat milk, egg, melted butter, and maple syrup, then pour into the dry ingredients and stir until just combined, leaving some lumps.

  3. 3

Heat a non‑stick skillet over medium heat and lightly grease with butter; pour 1/4 cup batter per pancake, cooking 2‑3 minutes per side until golden and fluffy.

  4. 4

While pancakes cook, place blueberries and lemon juice in a small saucepan, simmer 5 minutes, stirring occasionally until the berries burst and the sauce thickens.

  5. 5

Serve the pancakes stacked, topped with warm blueberry compote and a dusting of powdered sugar if desired.
