New York Style Cheesecake

A dense, creamy, and rich cheesecake with a classic graham cracker crust.

Ingredients

  • 1.5 cups Graham cracker crumbs
  • 5 tablespoons Unsalted butter, melted
  • 1.25 cups Granulated sugar
  • 32 ounces Cream cheese, softened
  • 1 cup Sour cream
  • 1 tablespoon Vanilla extract
  • 4 units Large eggs
  • 1 teaspoon Lemon juice(optional)
  • 3 tablespoons All-purpose flour

Instructions

    Preheat oven to 350°F (175°C). Grease a 9-inch springform pan.

    Mix graham cracker crumbs, melted butter, and 2 tablespoons of sugar. Press firmly into the bottom of the pan and bake for 10 minutes. Let cool.

    Lower oven temperature to 325°F (160°C).

    In a large bowl, beat cream cheese and remaining sugar until smooth. Do not overmix to avoid air bubbles.

    Blend in sour cream, vanilla, lemon juice, and flour.

    Add eggs one at a time, mixing on low speed just until combined.

    Pour batter over the crust. Wrap the outside of the pan in heavy-duty foil and place in a larger roasting pan filled with 1 inch of hot water (water bath).

    Bake for 75-90 minutes until the edges are set but the center still wobbles slightly.

    Turn off the oven and crack the door open. Let the cheesecake cool inside the oven for 1 hour.

    Remove from oven, cool completely, then refrigerate for at least 6 hours or overnight before serving.
