Ingredients

  • 12 oz ground beef (80/20)
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 8 oz mushrooms, sliced
  • 1/2 cup onion, thinly sliced(optional)
  • 1 tbsp butter
  • 4 oz Swiss cheese, sliced
  • 2 buns burger buns
  • 2 tbsp mayonnaise
  • 1 tbsp Dijon mustard
  • 1/4 tsp garlic powder(optional)
  • 1 tsp olive oil(optional)

Instructions

  1. 1

Prep (10 minutes): Slice mushrooms (and onion if using). Form beef into 2 patties and season both sides with salt and pepper.

  2. 2

Cook mushrooms (about 6 minutes): Heat butter in a skillet over medium-high heat. Add mushrooms (and onion if using) and cook until browned and tender, 5–6 minutes. Transfer to a plate.

  3. 3

Sear burgers (about 8 minutes): In the same skillet, add a little olive oil if needed. Cook patties 3–4 minutes per side until browned and cooked to your preferred doneness.

  4. 4

Melt Swiss (about 2 minutes): Top patties with Swiss cheese and cover the skillet briefly until cheese melts.

  5. 5

Toast buns + finish (about 2 minutes): Toast buns in the skillet for 1–2 minutes. Mix mayonnaise and Dijon for the quick sauce. Assemble burgers with mushrooms, sauce, and toasted buns.
