Ingredients

  • 2 large flour tortillas
  • 1 cup fresh mushrooms, sliced
  • 1 cup fresh spinach leaves
  • 1 cup shredded cheddar cheese
  • 1 tablespoon olive oil
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

Instructions

  1. 1

Heat the olive oil in a skillet over medium heat (about 1 minute).

  2. 2

Add the sliced mushrooms, season with salt and pepper, and sauté until softened, about 2 minutes.

  3. 3

Stir in the spinach and cook until wilted, about 1 minute; remove from heat.

  4. 4

Place one tortilla in the skillet, sprinkle half the cheese, then spread the mushroom‑spinach mixture, and top with the remaining cheese.

  5. 5

Cover with the second tortilla and press lightly; cook until the bottom is golden, about 2 minutes, then flip and toast the other side until golden and cheese is melted, another 2 minutes.

  6. 6

Remove from skillet, cut into wedges, and serve immediately.
