Ingredients
- 2 fillets cod fillets
- 1.5 tbsp white miso paste
- 2 tbsp unsalted butter
- 1 tbsp soy sauce
- 1 tsp honey(optional)
- 1 clove garlic
- 1 tsp fresh ginger(optional)
- 3/4 cup long-grain white rice
- 1.5 cups water
- 1/4 tsp salt(optional)
- 4 cups mixed greens (spinach or chard)
- 1 tbsp olive oil
- 1 tbsp lemon(optional)
- 1/4 tsp black pepper(optional)
Instructions
- 1
Prep (10 minutes): Pat cod dry and season lightly with salt and black pepper. Mince garlic (and ginger if using). In a small bowl, stir miso paste, butter, soy sauce, honey (if using), and 1–2 tbsp warm water until smooth; set aside.
- 2
Cook rice (about 10 minutes): Rinse rice briefly if desired. Add rice and water to a small pot, bring to a boil, then reduce to a simmer, cover, and cook until tender (about 10 minutes). Turn off heat and keep covered.
- 3
Sauté greens (about 5 minutes): Heat olive oil in a skillet over medium-high heat. Add garlic (and ginger if using) and cook 30 seconds. Add greens and sauté until wilted and bright, 2–3 minutes. Season with a squeeze of lemon if using; set aside.
- 4
Glaze and cook cod (about 10 minutes): Wipe skillet if needed. Add cod and cook over medium heat until it flakes easily, about 4–6 minutes per side depending on thickness. Reduce heat to low, pour in the miso-butter mixture, and spoon over cod for 1–2 minutes until glossy.
- 5
Serve: Fluff rice, plate with sautéed greens, and top with miso-butter glazed cod. Spoon any extra glaze over the fish and serve immediately.
