Ingredients

  • 2 pieces large flour tortillas
  • 1/2 cup red bell pepper
  • 1/4 cup yellow onion
  • 1/3 cup oat milk cheese (store‑bought or homemade)
  • 1 tablespoon olive oil(optional)
  • 1/4 teaspoon ground cumin(optional)
  • 1/4 teaspoon salt(optional)

Instructions

  1. 1

Heat the olive oil in a skillet over medium heat; add the sliced bell pepper and onion, season with cumin and salt, and sauté for 4–5 minutes until softened.

  2. 2

Spread the oat milk cheese evenly over one side of each tortilla, then layer the sautéed vegetables on top of the cheese; place the second tortilla on top, cheese side down.

  3. 3

Cook the assembled quesadilla in the same skillet (or a clean non‑stick pan) over medium‑low heat for about 3 minutes per side, pressing gently, until the tortillas are golden and the cheese is melted.
