Ingredients

  • 2 ears Corn on the cob
  • 2 tablespoons Mayonnaise
  • 1/4 cup Cotija cheese
  • 1 whole Lime
  • 1 teaspoon Chili powder
  • 2 tablespoons Cilantro(optional)
  • 1 pinch Salt(optional)

Instructions

  1. 1

Preheat a grill or grill pan over medium-high heat (about 5 minutes).

  2. 2

Place the corn cobs directly on the grill and cook, turning every 2 minutes, until kernels are charred in spots, about 8‑10 minutes.

  3. 3

While the corn cooks, mix mayonnaise, chili powder, juice of the lime, and a pinch of salt in a small bowl.

  4. 4

Remove the corn from the grill and brush each ear generously with the mayo mixture.

  5. 5

Sprinkle crumbled cotija cheese over the coated corn, then add optional chopped cilantro for freshness.

  6. 6

    Serve immediately while warm.
